Beetroot risotto

Monia from Kuchenne Fantazje whips up this stunning looking risotto stained with beetroot and topped with goats cheese. Imagine serving this at a girls lunch with a big crisp salad and lots of wine. It’s vegetarian too so should tick lots of boxes. Also check out her risotto with prawns and chilli and risotto with mushrooms. mushroom and barley risoto

Mushroom and Barley risotto is where’s it at this winter – it just says ‘Comfort food’. It’s a great option for vegetarian’s but wouldn’t put off a hearty meat eater either as the mushrooms make it well…meaty – especially if you use exotic mushrooms like shiitake.  Samantha from food blog Dizzle and dip also uses barley (in place of risotto rice) to add a nutty taste. I’m all about mixing it up, so this suits me perfectly. Ingrid
